With its dense yet soft texture, it preserves the characteristic grains of quince and an aroma reminiscent of cooked wine – sweet and enveloping, with a slightly tangy aftertaste. The addition of Sapa, obtained through the slow cooking of grape must, gives it a deep and unmistakable flavour, turning this jam into a truly unique specialty. Perfect with boiled capon, surprising on polenta, and ideal with aged hard cheeses, both pecorino and cow’s milk varieties with bold flavour, such as Pecorino di Pienza or Puzzone di Moena.
