Considered the “king of Italian rice,” Carnaroli is one of the finest and most appreciated superfino varieties. Created in 1945 from the cross between Vialone and Lencino, it combines the best qualities of both varieties. Its large, elongated grain (about 7 mm), with a white central core and bluish hue, maintains a firm and elastic consistency even after cooking. With its clean and slightly sweet flavor, it stands out for its high amylose content (up to 24%), low starch dispersion, excellent absorption capacity, and remarkable resistance to cooking. Perfect for risottos, timbales, and rice with sauces, it neither overcooks nor breaks apart, ensuring excellent results even for less experienced cooks. A true prince of Italian cuisine, capable of turning every recipe into a signature dish.
