A historic variety of Italian rice cultivation, selected in 1946 in Arborio, in the province of Vercelli. It is distinguished by its long, semi-round, pearly grain with a very large central core. Thanks to its low amylose content, it releases abundant starch during cooking, giving risottos a soft and creamy texture. Considered one of the best rices for risottos, it is the perfect ally for rich and enveloping preparations, though it is not suitable for rice-based desserts.
